Our meats and fish, and most Kathleen's Kitchen items (except salads, dips and sushi), are frozen - these items will arrive frozen when packed in dry ice. Heart is tender and has a very delicate flavor. To prepare it, rinse it in cold water, then cut out any blood vessels and connective tissue. Grill it until it's medium rare. If cooked until well done, it becomes very tough. Or, cook heart slowly using moist heat. Sliced.

Liver is rich in iron and Vitamin A and has a bold flavor that nicely complements grilled onions. Liver can be cooked with dry heat, say by grilling or sauteing it, but it becomes very tough if it's cooked beyond medium rare.

Kidneys are nutritious and, if properly prepared, delicious. Beef kidneys need to be cooked slowly using moist heat. To prepare: cut off the outer membrane, then slice lengthwise to expose a white blob of fat in the center (discard). Next, soak the kidney in acidulated water or buttermilk for about an hour to make the flavor much more mild.
